those who know me well are often flabbergasted by my superhuman ability to eat the same food over and over again. for example, when living in new york, i once went three months eating peanut butter and jelly sandwiches for dinner every single day. not because i was impoverished, but because i actually wanted to. now i'm in san francisco, and colette teases that for as long as she's known me, i only make two dishes, and she knows just by looking at my dishware what i had for dinner that night. if a plate is lying out - then i had chicken apple sausage wrapped in a whole wheat quesadilla. if there's a bowl on the coffee table, then i prepared my speciality: artichoke spaghetti noodles with garlic, chili pepper, and parmesan flakes. that's it - two dishes in my repertoire, day after day.
for me, roadtrip to skinny will be about injecting some much-needed variety into my diet (man cannot live on chicken apple sausages alone!). this will be a surprise to colette, but i actually do enjoy cooking! i cooked for myself frequently in college and grad school. but, these days i've invoked the well-worn excuse that it's hard to find/make the time, and cooking for one isn't as much fun as cooking for two. blah blah blah. no more! i have a few tricks up my sleeve!
so here's what i made tonight:
rainbow trout with yogurt sauce - a college favorite of mine (does that make me sound old?) prepared with a side of mixed greens with apples and some couscous mix. not too shabby for day one, me thinks.
it was so tasty.
